Not all bone broth is made the same. Here’s why the ingredients, cooking time and process matter.
Bone broth has become increasingly popular among people interested in collagen, protein and traditional approaches to nutrition. But with so many products now labelled bone broth, it’s worth asking: what actually makes a good bone broth?
At Qué Broth, we believe it comes down to three things: the quality of the ingredients, the time spent cooking and the care taken throughout the process.
Based in Ibiza, we make our bone broth in small batches using beef bones, chicken carcasses, fresh vegetables and filtered water. It’s a traditional approach to cooking, guided by over 20 years of professional kitchen experience.
The science behind the broth
Bones and connective tissue naturally contain collagen, a structural protein. When slowly cooked in water, collagen gradually breaks down into gelatin.
This is what gives a properly extracted bone broth its rich body and characteristic texture.
One of the simplest ways to see this is to refrigerate your broth. As it cools, the gelatin can cause it to set into a natural gel. Once warmed, it returns to liquid.
It’s a hallmark of a gelatin-rich broth, although the consistency alone doesn’t determine its exact collagen or protein content.
Not all bone broth is made the same
The cooking process makes a difference.
Some commercial broths are produced quickly, made from concentrates or formulated primarily for flavour, shelf life and production efficiency. Traditional bone broth takes a different approach.
At Qué Broth, we allow our ingredients to simmer slowly over many hours, giving the bones and connective tissue time to release flavour, gelatin and naturally occurring proteins.
It’s not the fastest or most efficient way to produce broth, but we believe it’s the right way to make ours.
Bone broth vs collagen supplements
Bone broth and collagen supplements aren’t quite the same thing.
Collagen supplements typically contain concentrated, processed collagen peptides. Bone broth, on the other hand, is a whole food containing gelatin, proteins, amino acids and other naturally occurring components extracted during cooking.
We don’t believe bone broth needs to compete with supplements. It’s food, first and foremost.
Enjoy it warm in a mug, use it as a base for soups and sauces, or bring a little more depth to your everyday cooking.
A different kind of daily ritual
At Qué Broth, we keep things simple: real ingredients, traditional cooking methods and no unnecessary shortcuts.
Made in Ibiza, in small batches, with a chef’s approach to food.
Because when it comes to bone broth, how you make it matters just as much as what goes into it.
Real ingredients. Slow cooking. Nothing rushed.
That’s Qué Broth.
