Organic vs Grass-Fed: What Actually Matters When Making Bone Broth

One of the questions I get asked most about Qué Broth is:

“Is it organic?”

It’s a fair question. The word organic has become a powerful label in the food world. Many people assume it automatically means healthier animals, better farming practices, and higher quality food.

But the reality is more complicated.

What “Organic” Actually Means

In most countries, organic certification refers to a set of farming regulations. These rules usually cover things like:

* the type of feed animals are given

* certain restrictions on chemicals

* specific farming practices

But organic certification does not necessarily mean small-scale farming, nor does it guarantee animals lived entirely on open pasture.

Large-scale organic farms still exist.

And like any farm, animals can still become sick.

Animal Welfare in Real Farming

If an animal becomes ill, responsible farmers will treat it.

Just like you would treat your child if they had an infection or a fever.

Sometimes this may involve medication or veterinary treatment. That doesn’t make the farm unethical, it means the farmer is caring for the animal.

Good farmers prioritise animal welfare.

And that’s something that matters far more than simply checking a marketing label.

Why Grass-Fed Matters for Bone Broth

When it comes to bone broth, the quality of the bones is everything.

Bones from animals that have eaten a natural diet, particularly grass-fed cattle, tend to produce richer broth with better flavour and nutrient density.

For me as a chef, sourcing good bones is the most important step.

Then comes the cooking process.

Bone broth is not complicated, but it cannot be rushed.

To properly extract collagen, minerals, and gelatin from bones, they must be simmered slowly for many hours.
